The Bolo Rei must not be missing in a Portuguese Christmas. The candied fruit to make a king cake every honor. Who wants to even try it once, here’s the recipe:
Ingredients for the dough:
1 kg flour
100 g sugar
200 g margarine or butter
5 eggs
50 g yeast
2 cl port
250 ml milk
1 teaspoon salt
50 g candied orange peel
50 g of ground pine nuts
50 g ground walnuts
100 g raisins
For the topping:
50 g candied cherries
powdered sugar
1 egg yolk
100 g dried fruit
Preparation:
Half of the milk is heated and mixed with yeast and ½ teaspoon salt. Then you can walk it in a warm place.
Then the yeast with the remaining dough ingredients are kneaded into a dough. The dough must go turn slightly before being shaped into a thick roll.
The roll is formed into a circle whose center is a cup made later, so the wreath does not coincide. Finally, the candied cherries and dry fruits are spread on the dough and the yolk is all eingepinselt.
At 180 – 200 degrees is the Bolo Rei about 30 minutes and then baked dusted with powdered sugar.
